sweet potato and aubergine, cooked with Thai spices and coconut milk. (Serves 2)
Ingredients: sweet potato, aubergine, coconut milk, tomato, spices, herbs, shallots, garlic, ginger, salt, pepper, lime juice, palm sugar.
Cooking instructions: de-frost; pre-heat oven to 180c (Fan). Pierce film and cook for 30 minutes, or until heated through.
